Experience the slow countryside in Follonico. A typical Tuscan farmhouse transformed into an authentic farmhouse. In Torrita di Siena, in the heart of the Val di Chiana. This is the life chosen by Fabio and Suzanne Firli. They left the hustle and bustle of the city of Tivoli to find contact with nature and with themselves. Never before a better choice was made: "We would do it a thousand times."
In southern Tuscany they live with their three children, sheep, bees, hens and geese. And again: two dogs, a cat, a rabbit, a donkey and a horse. They take care of a small piece of vineyard, hectares of olive groves and 8 beehives to produce wine, extra virgin olive oil and wildflower honey: “One year we had a very particular honey, almost single-flowered. Due to the drought we were forced to move the hives and put them on 7 hectares sown with sunflowers with a small lake in the center” says Fabio.
The Montefollonico area, together with Trequanda, Castelmuzio and Montisi, is ideal for the production of extra virgin olive oil: "The highest altitudes are perfect for olive trees, which do not like stagnant water. On the other hand, the best areas for wine are the land around 250 meters above sea level” explains Fabio. The lower part of Montalcino has wonderful vineyards. Like those of the Uccelliera winery by Andrea Cortonesi. An old-fashioned country boy; a sincere, pure and sincere winemaker. His vineyards are his life; its wines a surprise for the palate.
What the land of this modern farmhouse produce can be tasted in the morning. For breakfast Fabio and Suzanne prepare simple recipes with genuine, organic and 100% Tuscan ingredients. Jams, honey, chicken eggs and geese. Fruit and vegetables from the garden, homemade sourdough bread. And some gems from small organic producers, such as apple juice.
Isolated, but not far away. Essential, but not trivial. Follonico is a refuge for the few. An authentic country house, renovated with respect for the original architecture and embellished with Tuscan terracotta floors, linen sheets and recycled materials. Like the old doors and shutters that decorate the six rooms. The air smells of lavender water, the same created by Suzanne with the flowers of the garden. Relax in the infinity pool. Over there, on the hill, you can see Montepulciano.
